Quinoa Pilaf

Cooked quinoa - 1 cup
Chopped onions - 1 cup
Chopped Cilantro - 1 cup
Chopped Bell pepper, Carrot and Peas - 1 cup
Chopped ginger and garlic - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Garam Masala powder - 1/2 to 1 teaspoon
Oil (your choice) - 2 tablespoon
Salt to taste

Spices for grinding:
Cardamom - 3 or 4
Cinnamon - 1/2 inch stick
Cumin seeds - 1/2 teaspoon
Bay Leaf - 1 whole
Dry grind the above and set aside.

Cooking Method:
Step 1: Heat a pan, add 1 tablespoon of oil.
Step 2: When the oil is hot, add the onions, sautee untill golden brown.
Step 3: Add chopped ginger/garlic, sautee lightly.
Step 4: Add the dry ground spices.
Step 5: Add bell pepper, carrot and peas and sautee.
Step 6: Add cumin powder, coriander powder and garam masala powder.
Step 7: Add salt per taste once the veggies are almost cooked, add quinoa and mix.
Season with cilantro and serve it with raita.
